Full Version: One minute muffin

The One Min. Muffin (12 grams of fiber)

1/4 cup flax seed mill (grind in a coffee machine)
1 egg
1/4 teaspon baking powder
1 dash of salt
1 package of splenda

mix together and place into microwave for 1 minute. I have some Pamper Chef glass little bowls, I put my mix in. Any microwaveable dish will do. Reminder: the smaller the container, the muffin becomes more heavy. The bigger the fluffier.

I dont put sugar. I replace with some honey, cinn., nutmeg.
Also put sunflowers seeds, sliced almonds and dried cranberries.
My son likes choc. chip in his.

You can also make it savory.
The sky is the limit.
I have a friend who puts, ham, cheese and chives with some herbs.

The first time I made this, I had to cut it into 4ths and ate it thru out the day. If your nt use to alot of fiber, take it slow because you could have problems at the bathroom.

another FYI snacks:

kashi has a good cereal: heart to heart ( i eat it sometimes for snack)

kashi granola bars: honey almond flax seed chewy

alot of apples
wheat crackers (the triscuits)?
celery and peanut butter.

oatmeal cookies:
I substitute alot of things in mine. cut all the sugars, add apple sauce, flax seeds (whole/ground) oatmeal flour, dried cranberries.

sometimes I eat black beans with lime and cilantro
boiled eggs/ deviled eggs
hummus and pitas
olives


I'm kinda not a person that eats normal things.

I'll have to wait till I get down into the valley to get the flax seed, they don't care that at our little local market.

I shall have to use honey as Splenda makes me ill.

I tried this receipe yesterday for breakfast, it is good. But I was 111 before eating breakfast was fine 2 hrs later at 111 but at 3 hrs I was 212. I could feel the rapid rise and it made me sick. I have always known that alot of diabetics should not eat alot of flax as it tends to raise numbers so I'm cautioning people about using so much flax. I can get away with a Tablespoon here and there, but I guess not a whole 1/4 cup. Too bad since it is a nice easy to make good tasting muffin.

Thanks Geri for the info on the flax, now I am not so sure I want to try this.

I tried it today and added cinnamon, it was very good. It is similar to another recipe I have used that has 3T ground flaxseed and 2 T butter oil. This one tasted just as good and is better for the waistline.
